Sourdough Penne alla Vodka

- Ingredients
- 2 tablespoons Bionaturae Extra Virgin Olive Oil
- 4 oz. diced pancetta
- 1 medium yellow onion, finely chopped
- 2 garlic cloves, finely chopped
- ½ teaspoon red pepper flakes
- ¼ cup vodka
- 28 oz. can Bionaturae Crushed Tomatoes
- ¾ cup heavy cream
- ¼ cup grated Parmigiano Reggiano cheese, plus more for serving
- 1 tablespoon roughly chopped fresh oregano and basil (optional for garnishing)
- Salt and pepper to taste

- Instructions
- Cook the pasta according to the packaging instructions. Stir frequently. Reserve some of the pasta cooking water to thin the sauce if needed.
- Sauté garlic, onions, and pancetta in olive oil over medium heat in a saucepan.
- Add vodka, cook for 1 minute, then add the tomatoes. Reduce heat and simmer 10 mins.
- Pour in heavy cream and Parmigiano cheese, stirring to combine, keeping heat on low.
- Add red pepper flakes and salt and pepper to taste.
- Combine with pasta, top with cheese, and garnish with herbs.
