Whole Wheat Spaghetti alla Checca

- 1⁄3 cup Bionaturae Extra Virgin Olive Oil
- 8 cloves garlic, finely minced
- 1 pint cherry tomatoes, cut in half
- Salt to taste (about 1 teaspoon)
- 1 (16 ounce) box Bionaturae Whole Wheat Spaghetti
- 1 bunch fresh basil, about 25 leaves, cut into thin ribbons
- Parmigiano Reggiano, optional
- Instructions
- Heat a large skillet over medium-low heat. Once hot add olive oil. Once oil is hot, add garlic, let garlic cook until fragrant, 1-2 minutes.
- Add cherry tomatoes and let cook, stirring often until tomatoes break down and start to caramelize, about 20 minutes.
- Meanwhile, cook pasta in a large pot of salted rapidly boiling water. Drain pasta and add to olive oil sauce. Toss to combine, salt to taste. Remove from heat. Stir in basil and top with grated Parmigiano Reggiano, if desired.
Serves 6
