Panna Cotta with Citrus Ginger Compote

- Ingredients
- For the Panna Cotta
- 2 cups heavy cream (or coconut milk)
- 1⁄3 cup light honey
- 1 teaspoon vanilla extract
- 3 tablespoons water
- 2 teaspoons gelatin
- For the Citrus Ginger Spread Compote
- ½ cup Citrus Ginger Fruit Spread
- ¼ cup fresh squeezed orange juice
- 1 tablespoon honey
- For Garnishing
- 2 tablespoons toasted pistachios, lightly chopped
- Fresh fruit + mint, optional
- Instructions
- Make the Panna Cotta: Combine milk, honey, and vanilla extract in a small saucepan of medium to medium-low heat. Whisk until the mixture starts to simmer gently.
- Meanwhile, place 3 tablespoons of water in a small bowl, and sprinkle over gelatin. Mix thoroughly. Let stand for a few minutes.
- Add the gelatin mixture to the simmering milk mixture, then turn off the heat. Whisk until gelatin is thoroughly dissolved. Pour into desired ramekins or cups. Place in the refrigerator to set, 6-8 hours or overnight.
- Make the Citrus Ginger Fruit Spread Compote: Simmer together the Citrus Ginger Fruit Spread, orange juice, and 1 tablespoon of honey until thick and bubbly, about 3-4 minutes. Let cool.
- To serve: Once panna cotta has set, dollop on Citrus Ginger Fruit Spread Compote and garnish with pistachios and optional garnishes, if desired.
