Rustic Tomato Soup
Recipe by Katie Farina. Soup that speaks the language of Italy: Bionaturae 100% Organic Tomatoes & Extra Virgin Olive Oil, a couple teaspoons of basil, and a sprinkle of Italian soul. Buonissimo!
- Ingredients
- 2 tablespoons Bionaturae Extra Virgin Olive Oil
- 1 medium yellow onion, small dice
- 2 garlic cloves, minced
- 2 teaspoons dried basil
- Pinch red pepper flakes
- 1 (28-ounce) can Bionaturae Diced Tomatoes
- 3 cups vegetable broth
- 1 medium russet potato, medium dice, skin on
- Salt to taste, about 1 ½ - 2 teaspoons
- Instructions
- Heat a large pot over medium-low heat. Once hot, add olive oil. Once oil is hot add onion, garlic, dried basil, and a pinch of red pepper flakes. Sauté until onion is translucent – about 10 minutes.
- Add diced tomatoes, vegetable broth, and potato. Bring to a gentle simmer, simmer for 20 minutes or until potato is soft.
- Let soup cool slightly. Then transfer to a high-speed blender or use an immersion blender to blend until completely smooth. Salt and pepper to taste.
Serves 6
